Creamy Spinach Sauce
This creamy vegetable sauce is ready in 10 minutes to serve over chicken, rice and potatoes, or to toss with pasta for a Florentine-style dish.
1/2 cup chopped onion
2 tsp. minced garlic, or 1/4 tsp. garlic powder
3 Tbsp. butter
1/4 cup all-purpose flour
1 1/2 tsp. dried basil (optional)
1/4 tsp. black pepper
1 can (14.5 oz.) reduced sodium chicken broth
3/4 cup milk
1 can (14 oz.) Popeye® Chopped Spinach, rinsed and drained well in a colander
1/2 cup grated Parmesan cheese, optional
- Cook onion and garlic in butter 3 minutes over medium heat in a medium saucepan, or until onion is softened.
- Stir in flour, basil and pepper until flour is evenly moistened. Add broth and milk. Bring to a boil; reduce heat and simmer 2 to 4 minutes, whisking until smooth and thickened. Stir in spinach and Parmesan, if desired.
- For pasta, toss prepared sauce with 8 oz. cooked fettuccini or rotini pasta.
NOTE: Recipe can be doubled.
